• 2 large eggs

  • ½-¾ cup organic tomato sauce

  • 1 oz feta cheese

  • Cilantro

  • Pesto or olive oil

  • Double or triple the recipe for 2 or more people


  1. Use a non stick pan. The size will depend on the amount of servings.

  2. Put tomato sauce in pan and spread across to cover bottom of the pan. (use more tomato sauce if you want it saucier. I like it thicker myself.)

  3. Crack the eggs on top of the sauce.

  4. Put heat on medium and cover. Keep an eye on it because it reduces fast. Cook until eggs are at desired consistency.

  5. Take off heat and top with feta and cilantro.


  1. Add a side Veggie bread to dip in the yummy sauce.
