Mexican Slaw

INGREDIENTS

MEXICAN SLAW

  • 5 cups red cabbage shredded

  • 1 cup cucumber thinly sliced

  • 1 cup carrots shredded

  • 1 medium red pepper cored and sliced

  • 1/2 cup scallions diced

  • 1/2 cup cilantro minced & optional

  • (you can also used packed slaw mix if you are in a pinch or want to cut back on time)

HONEY LIME VINAIGRETTE

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • 1/4 cup lime juice

  • 1 clove garlic grated

  • 1 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon pepper

  • 1 jalapeno minced, optional

INSTRUCTIONS

  • Whisk together vinaigrette in the bottom of a large salad bowl.

  • Add all slaw ingredients to the bowl and toss well to combine. Note: this gets better after it sits for about 20 minutes at room temperature.

Makes 4 servings.
