Detox Soup


  • 1 tbsp olive oil

  • 1 onion chopped

  • 4 large carrots, peeled and chopped

  • 4 celery stalks, chopped

  • 2 cups sliced mushrooms

  • 1 1/2 cups cauliflower or broccoli florets (or mix)

  • 4 cups low sodium broth of choice

  • Herbs of choice: basil, oregano, thyme, garlic, cilantro


  1. In a large pan, heat olive oil over medium heat.

  2. Add the onion and cook for about 2-3 minutes until soft.

  3. Add veggies, seasoning and herbs. Stir to combine and cook for 3-4 minutes more.

  4. Transfer to a large pot and Add Broth . Bring mixture to a boil, reduce heat to medium low and simmer for 15 mins until the vegetables are tender.

  5. Add protein of choice: chicken, turkey or beef. You can add this after or slightly cook and then add when you add the veggies. Or for vegan leave as is or add 1 tbsp hemp seed.

  6. Optional: Top with fresh herbs.

Makes 8-10 cup servings.
